Spinach salad

INGREDIENTS

250 g fresh spinach leaves

1-2 courgettes cut into thin strips or small cubes

1 red onion, thinly sliced

100 g Mediterranean salad cheese, in cubes

100 g bread, thinly sliced

50 g sun-dried apricots

The zest of an untreated lemon

Salt

Pepper

INSTRUCTIONS

Arrange all the ingredients on a dish or in a salad bowl and serve with a good dressing. Ideal as a side dish to the main course or as a light lunch.
